The word BIRYANI (or briyani as locals call it) comes from the Persian word "BIRIYANI" which mean 'Fried before cooking'. The history of briyani dates back to the "Mughal" Era in the Indian Sub Continent where it was brought by King Taimur lung from Central Asia in 1398 AD.

Since then, briyani has evolved globally and currently more than thirty varieties are cooked all over the world, notable amongst them are the Indian, Arab, Persian and Pakistani styles of briyani.
